A wonderful recipe that will make your guests think you've worked a lot harder than you really have. Easy to make and will wow at the dinner table.
14 ounce can of artichoke hearts, drained and whole or halved
1.5 pounds of shrimp, peeled and cooked
3 tablespoons butter
2 cloves garlic, chopped
1 onion, chopped
12 ounce mushrooms, sliced
10 ounce can cream of mushroom soup, undiluted
0.5 cup mayonnaise
1 tablespoon Worcestershire sauce
2 tablespoons dry sherry
0.5 cup Parmesan cheese, grated
10 ounce package frozen spinach, chopped, thawed and well drained
salt and pepper to taste
paprika to taste
goes great with yellow rice
serves 6
Preheat oven to 375F
Saute garlic, onion and mushrooms in the butter
Mix soup, mayonnaise, Worcestershire sauce, sherry, cheese, salt and pepper
Add to the sauted mixture
Add spinach, then shrimp and artichokes
Put in buttered 2 quart casserole
Sprinkle with more Parmesan cheese and paprika
Bake until hot and bubbly, about 20 minutes.
